Description

Composition: Wine produced with Sangiovese in accordance with procedural guidelines.

Soil: Soil consisting of debris from the boulders of the Chianti mountains, originating from submarine landslides (Torbiditi), characterized by medium-fine-grained sandstones interspersed with clayey areas. The soil formed in the Oligocene, about 25 million years ago. The boulders produce more full-bodied, deeper, and richer wines, suitable for long aging.

Training Method: In the vineyards, we use the techniques of Gouyot and Cordon Spur with a density of approximately 5,000 plants per hectare.

Harvest Period: The grapes are handpicked during the month of October.

Winemaking and Aging: Fermentation occurs in steel vats for about 20 days, followed by aging for at least 20 months in oak barrels and tonneaux. The secondary fermentation process takes place in wood.

Tasting Notes: Deep ruby red color. On the nose, aromas of red fruits such as blackberry and black cherry are well integrated with notes of tobacco and toffee. On the palate, it is full-bodied, soft, yet fresh and elegant.

Food Pairings: Excellent when paired with red meat and game dishes. Ideal as a meditation wine or paired with spicy cheeses.
