Vinsanto del Chianti DOC wine is the pride of San Michele. It is a result of hard work that involves a lot of energy, time and space. Traditionally Vin Santo is enjoyed paired with Cantucci biscuits, however ours is best to be sipped and enjoyed alone. Its has a rich olfactory appearance and has an amplitude of scents that go from honey to dried fruits. The ethereal notes are an important part of its structure and it is a good wine to just sip and enjoy.

Description

Composition: Produced with Trebbiano and San Colombano grapes.

Soil: Silty clays formed during the alluvial phase of the Elsa River in the Upper Pliocene, about 3 million years ago. These clays produce fine and elegant wines, best suited for immediate consumption.

Training Method: In the vineyards, we use the Gouyot technique, with a density of approximately 5,000 plants per hectare.

Harvest Period: The grapes are harvested when fully mature and placed on racks to dry. They remain there until they reach the desired sugar concentration, around 40%.

Winemaking and Aging: Once the optimal sugar concentration is achieved, the grapes are selected and pressed to obtain the must, which is then placed in barrels of approximately 100 liters. These containers are made from various types of wood, such as oak, cherry, chestnut, and mulberry, each contributing a unique flavor to the Vinsanto. A slow fermentation process that lasts up to 5 years allows the wine to fully develop and bring out all its characteristics.

Tasting Notes: Amber color with a copper hue. Notes of dried fruit, dried apricots, and honey. Warm, sweet taste with a pleasantly dry finish.

Pairings: In our opinion, this is a wine for the mid-afternoon—a pleasant moment to share with loved ones, sipping it while listening to good music or reading a good book. For pairings, we recommend blue cheeses, goat’s cheeses, very mature pecorino, or a fine pâté.
