A Rosé Summer: The Natural Wines of San Michele a Torri

As summer approaches, there’s one wine that captures the spirit of the season more than any other: rosé.

In Tuscany—where winemaking tradition meets sustainable agriculture and a growing interest in natural wines—rosé takes center stage during the warmer months.

At Fattoria San Michele a Torri, our rosé wines are born from a deep respect for nature and a desire to express the authentic character of our land. Made from organically grown grapes and crafted with low-intervention techniques, these are honest, fresh, and versatile wines—ideal from aperitivo through to the entire meal.

A Natural Rosé: No Added Sulfites

Our Rosé IGT Toscana is a natural wine, made without added sulfites and without chemical substances in the vineyard or cellar. Fermentation is spontaneous, driven by native yeasts found on the grape skins, and every step of the process is designed to preserve the fruit’s integrity.

In the vineyard, we practice certified organic farming, using methods inspired by biodynamics: no pesticides or herbicides, but instead natural cover crops, compost, and techniques that support biodiversity. Our soils—stony, calcareous-marl formations from the Pliocene epoch—give the wine structure and balance.

The result is a vibrant, savory rosé that stays true to its terroir. Made with hand-harvested Grenache, Ciliegiolo, and Syrah grapes picked between mid-September and mid-October, the must is gently pressed and fermented in stainless steel at controlled temperatures.

Rosé IGT Toscana: The Fresh Taste of Summer

Pale cherry-pink in color, our Rosé IGT Toscana offers a bright, vinous aroma, layered with notes of wild strawberries, rose petals, and citrus zest. On the palate, it’s fruit-forward and thirst-quenching, with a crisp acidity and a dry, savory finish that lingers pleasantly.

Pairing is effortless: from classic Tuscan appetizers (salumi, pecorino cheese, crostini) to light pasta dishes and main courses with white meats or seafood. It also shines with Margherita pizza or a range of soft and aged cheeses. But perhaps its greatest strength lies in its drinkability—a perfect glass for summer garden parties, terrace dinners, or simply a moment of end-of-day relaxation.

Rosé Brut: Sparkling in Pink

For festive occasions or a stylish brunch, our Rosé Brut offers an effervescent alternative that brings together freshness and elegance. It’s also made from hand-harvested Grenache and Syrah grapes, picked during the first week of September. The grapes are gently pressed with no maceration, allowing the fruit’s delicate character to shine through.

Fermentation takes place at 14°C, and the second fermentation (prise de mousse) follows the Charmat Method. Regular bâtonnage adds complexity, while the final bottle aging enhances balance and smoothness.

In the glass, it’s a brilliant pink with a fine, persistent perlage. Aromas of flowers and bitter almond stand out on the nose, while the palate is dry, savory, and energized by a vibrant acidity that makes every sip a pleasure.

Perfect as an aperitif—especially with bruschetta, raw fish, sushi, or grilled vegetables—it also holds its own throughout a full meal. Try it with eggs, cured meats, smoked salmon, or fried dishes. Its lively acidity is the perfect companion for richer, more structured plates.
