Extra virgin olive oil is undoubtedly a symbol of Tuscan agriculture. Currently, Fattoria San Michele a Torri cultivates about 40,000 olive trees. The most important variety is Frantoio, but there are also trees of Moraiolo, Leccino, Maurino, and Rosselleino Cerretano. The olive groves extend over 346 acres at altitudes ranging from 150 to 300 meters above sea level on soils highly suited to olive growing. Since 2017, the farm has acquired its own olive mill, which allows for the optimal management of the crushing process, one of the most important stages of olive oil production. The mill is equipped with the most modern technology available on the market, A Mori Tem system designed to produce exceptionally high-quality oils fruity, spicy, and rich in polyphenols. The annual production is approximately 40,000 kg of Extra Virgin Olive Oil.

Laudemio is not only a variety of extra virgin olive oil, it is more than that. It is an extraordinary way in which you can taste the perfect blend between soil, environment, and expert agricultural techniques in which the essence of the olives comes to life. Laudemio is the exemplary outcome of centuries-long Tuscan tradition in olive oil production.

In 1988 a small group of expert olive oil producers began to work together with the mission to improve and protect the production of olive oil. This mission became a pact for excellence in production, based on strict rules and high-quality standards. This is how the Laudemio Consortium was born. History, tradition, genuineness, respect for the territory and the environment are the principles guiding the entire Laudemio production process, from the harmonious management of the olive plantations to the selective harvesting of the fruit at its perfect stage of ripening, from the crushing of the olives to the mixing and rigorously cold extraction, right up to the bottling and careful storage of the oil.

Special control councils and two very strict tasting committees make the final selection: only the best extra virgin olive oil from the best producers, a perfectly genuine, complete oil, with an extraordinary organoleptic personality will be able to boast the exclusive and virtuous Laudemio trademark.
