Extra virgin olive oil is undoubtedly a symbol of Tuscan agriculture. Currently, Fattoria San Michele a Torri cultivates about 40,000 olive trees. The most important variety is Frantoio, but there are also trees of Moraiolo, Leccino, Maurino, and Rosselleino Cerretano. The olive groves extend over 346 acres at altitudes ranging from 150 to 300 meters above sea level on soils highly suited to olive growing. Since 2017, the farm has acquired its own olive mill, which allows for the optimal management of the crushing process, one of the most important stages of olive oil production. The mill is equipped with the most modern technology available on the market, A Mori Tem system designed to produce exceptionally high-quality oils fruity, spicy, and rich in polyphenols. The annual production is approximately 40,000 kg of Extra Virgin Olive Oil.
