The organic extra virgin olive oil from Fattoria San Michele a Torri is made from a blend of Frantoio and Moraiolo olives, with small percentages of Leccino, Pendolino, and Cerretana olives added. The olives are handpicked at the right stage of ripeness, which typically coincides with the end of October to early November. The processing takes place at the company’s mill, within 24 hours of the harvest, and the oil is immediately filtered to preserve its excellent organoleptic and nutritional qualities. It has a very low acidity, 0.15% expressed as oleic acid, an excellent polyphenol content (300 mg/lt), and a consistent level of tocopherols (280 mg/lt). Our Laudemio has an herbaceous, fruity aroma that recalls olives. On the palate, it is immediately appreciated for its strong, fruity flavor with a pleasant spicy finish.
