Our Chianti Classico DOCG “I Casali” is named after the estate in which it was harvested. The soft Classic Chianti has good acidity and pleasant tannins which mark as its best features. It is a great “glass” to be shared among friends on a cheerful evening.
Vines: The grapes used are Sangiovese (90%) Canaiolo (5%) and Merlot (5%)
Soil: The soil is semi soft with tendencies of clay. Because it is a skeletal-rich soil, it is considered on average, fertile.
Training: The method of training is the cordon with plant density of 5,000 vines/hectare.
Harvest: The harvest is done manually and usually begins in late September, early October.
Soaking and fermentation: The fermentation process is done at 28-38 degree celsius in steel containers where polyphenols are extracted from the skins gently. The fermentation process lasts about 20 days.
Aging: The young wine is transferred into 25hl oak barrels where it remains for at least 12 months. It is during this long aging process that the wine reaches its complexity and softness. In order to integrate the fruity flavors with the floral, we use the large 25hl barrels as opposed to the smaller barriques. This also helps create the wooden scents found typically in Sangiovese.
Appearance: Ruby red, dense and consistent.
Aroma: Intense and persistent with fruity floral scents.
Taste: Warm, soft and fruity with light tannins and pleasant acidity.
Considerations: A wine best consumed within 4-6 years after harvest.

Pairings: Suitable for all dishes. It matches very well with many appetizers thanks to an interesting olfactory appearance with well- marked fruity and floral scents. For example Tuscan crostini with pate or salami and cheese would be a perfect combination. It pairs best with tasty meat sauces such as amatriciana or carbonara for the first course and with roasted meats such as roast beef for second courses.
VINES: Trebbiano (80%) and San Colombano (20%) APPEARANCE: Amber yellow with nuances of copper. Very dense and consistent. AROMA: Notes of sweet dried fruit, dried figs, dates, dried apricots and honey with ethereal notes of enamel. TASTE: Warm and very pleasant with a fruity and sweet entrance and dry finish. PAIRINGS: We believe this wine is best in the middle of the afternoon while reading a good book or listening to music. Besides this type of pairing we also think it tastes great with blue cheese, goat cheese and pate.
VINES: The grapes used are Chardonnay (70%), Pinot Bianco (25%), Petit Manseng (5%) APPEARANCE: Straw yellow with greenish reflections. AROMA: Fruity with hints of golden apple and white flowers. TASTE: Warm, soft, savory and fruity. PAIRINGS: Traditionally, white is a fish wine, however we also recommend it with dishes like Florentine tripe or “lamprey”. It is also an excellent wine paired with pasta with vegetables richly seasoned with herbs.
