The land
The Fattoria di San Michele a Torri is spread over an area of approx. 200 hectares. Of this, approx. 50 hectares are occupied by vineyards, 30 by olive groves and the remaining land by cereal crops and woodlands.
Part of the vineyards (6 hectares) fall within the in Chianti Classico territory.
The nature of the land is varied, however it comprises mainly land originating from floodland, with rocky soil, and is therefore particularly suited to the cultivation of vines.
Grapes have been grown for centuries in this area and therefore there is a well consolidated tradition of vines suitable to the local soil and climate
The farm also has an old vineyard, planted around seventy years ago, with the varieties of grapes and clones typical of that period.
The principal vines cultivated in the area are Sangiovese, Canaiolo and Colorinoan. In the last six years, other vines have been introduced, such as Cabernet Sauvignon, Merlot, Chardonnay and Riesling. However, these vines cover a limited area only.
Wine and oil production

Our red wines
Our red wines, such as Chianti Classico and Chianti Colli Fiorentini are made principally from Sangiovese grapes. In the preparation of Chianti Classico, in addition to this grape, which gives body to the wine, we also use a small quantity of Colorino grapes; in order to give complexity to our Chianti Colli Fiorentini we add a small quantity of Canaiolo grapes to the Sangiovese base.
Specially selected vines and grapes are used in the preparation of this wine; the vines are usually thinned out towards the end of July in order to improve the quality of the product. Each hectare of vineyard produces an average of 50 ql. of grapes.
The must is left to ferment in stainless steel vats with a maximum volume of 70 hl. Destalage is usually carried out on a daily basis for a few weeks, after which the wine is released.
The wines destined for maturing are placed in oak barrels of 20, 25, or 70 hl.
Our Vino Novello is produced from the following grape varieties: Canaiolo 70%, Malvasia Rossa 5%, Sangiovese 10% and Colorino 15%. the grapes are placed whole in a stainless steel vat saturated with carbon dioxide produced by a small quantity of fermenting must. The atmosphere saturated with carbon dioxide provokes a transformation within the grape (reduction of acidity;) and the creation of particular aromas.

Our white wines
The white wine "Vino Bianco DOC dell'Etruria Centrale" is made from Trebbiano and Chardonnay grapes.
The grapes are lightly pressed; and the must is left to ferment at a controlled temperature.

Our vinsanto
Our Vinsanto is made from the following grape varieties: Trebbiano, Malvasia Bianca and San Colombano. After picking, the grapes are left to dry up on racks until the middle of January

Our olive oil
As regards the varieties of extra-virgin olive oil ; the estate grows the typical olives of the Chianti region : Frantoio, Moraiolo, Leccino.
The olives are harvested by hand during the months of November and December and are taken straight away to the olive press, where they are crushed at room temperature using millstones in accordance with ancient tradition.
Our oil has an excellent fruity taste with a slight hint of spice. Due to its delicate perfume, this oil is ideally suited to all types of condiment. It is normally stored in our cellar in ancient earthenware pots.
